Ingredients

  • 1.5 lb carrots peeled and cut into 1/4-inch-thick diagonal slices
  • 2 tbsp unsalted butter
  • 2 tbsp honey
  • 0.33 cup water
  • 0.5 tsp kosher salt

Equipment

  • 1 12-inch skillet

Method

  1. Melt the butter in a 12-inch skillet over medium heat, then add the carrots and toss to coat.
  2. Stir in the honey, water, and salt; cover and cook over medium heat for 10 to 14 minutes, stirring once, until the carrots are fork-tender.
  3. Uncover and cook, stirring often, for 3 to 5 minutes, until the liquid reduces to a glossy glaze that coats the carrots.

Notes

For the glossiest coating, stir often during the uncovered cooking step and stop when the glaze coats the carrots. Refrigerate leftovers in an airtight container for up to 4 days; freezing is not recommended because the carrots may soften. For a dairy-free option, use plant-based butter.
