Ingredients

  • 6 slices bacon cut into 1/2-inch pieces
  • 1.5 lb Brussels sprouts trimmed and halved
  • 1 tbsp olive oil
  • 0.25 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 rimmed baking sheet

Method

  1. Preheat the oven to 425°F.
  2. Spread the bacon on a rimmed baking sheet and bake for 12–15 minutes, until crisp and the fat has rendered.
  3. Transfer the bacon to a paper towel-lined plate and leave 1 tablespoon of drippings on the pan.
  4. In a large bowl, toss the Brussels sprouts with the olive oil, salt, and pepper.
  5. Arrange the Brussels sprouts cut-side down on the baking sheet.
  6. Roast for 20–25 minutes, until the sprouts are browned and tender.
  7. During the final 5 minutes of roasting, add the bacon to the baking sheet.

Notes

For the best browning, arrange the sprouts cut-side down with space between them. Refrigerate leftovers for up to 4 days; freezing is not recommended because the sprouts can soften. For a vegetarian variation, use plant-based bacon.
